Jam or Pineapple Tarts

Tarts with pineapple jam that simply melts in your mouth.

Jam Tarts

 

Ingredients
  • 250g butter
  • 120g icing sugar
  • 2 egg yolks
  • 270g plain wheat flour
  • 200g custard flour
  • ¼ tsp vanilla essence
  • Jam - Use strawberry jam/ pineapple jam or any ready-made bottled jam of your choice; also check out how to make pineapple jam here

Method

  • Set the oven to 170 degC.
  • Beat butter, icing sugar, egg yolks and vanilla essence until light and fluffy.
  • Fold in the plain flour and custard flour and mix well.
  • Roll out the dough to about 7mm thickness, then shape and cut with a tart mould
  • Place cut pastry onto a greased baking tray and spoon about half a teaspoon of jam onto the centre of the tart.
  • Bake in oven for about 15 minutes or until golden brown.
