Peanut Cookies

TRADITIONAL PEANUT COOKIES

Traditional peanut cookies prepared for Chinese New Year simply melts in your mouth.

Great biscuits for the festive season - New Year, Chritsmas or Hari Raya

Ingredients

280g ground peanut, toasted and grounded

20g white sesame seads, grounded
200g flour
1/2 tsp baking powder
100g icing sugar
1/4 tsp salt
100g (or more) peanut oil

Egg wash: 1 egg yolk lightly beaten with 1 tsp water

Method
Put the peanuts in a wok and dry fry over low heat till crunchy. Remove the membrane and put into a grinder with the sesame seeds, grind until fine.
Mix flour, baking powder, ground peanut powder, icing sugar and salt in a mixing bowl - combined ingredients well.

Add in 100g peanut oil (or more) slowly and mix till mixture forms a piable dough. If dough is too wet, you can add more flour.
Shape into round balls (or as you wish) and place in a baking tray. Press the top of the ball with a spoon and the back of a chopstick. Apply egg wash ober each cookie

Bake on a lined tray at 180C for 11-15 minutes or till golden brown.
