Stir Fried Pineapple (Nonya Style)

Pineapple cooked with shrimps can be served as a vegetable dish with any rice meal.

Ingredients ½ a medium-sized ripe pineapple4-5 cloves garlic, chopped2cm thumb-sized ginger, cut into thin strips1-2 red chilies, cut into thin strips1 big tbsp ground dried shrimps or udang keringOne cup shrimp or prawnsA dash of pepper

Oil, salt, sugar to taste

Method

Heat oil in a pan or kuali, when oil is hot, add and fry garlic and ginger.Add dried shrimps and prawn. When prawn is slightly cook, add the pineapple and stir fry.Add pepper and salt (and sugar if pineapple is sour) to taste. Stir in the chilies just before dishing out. Serve with rice and other dishes.
