Kueh Bahulu / Kuih Bahulu or Kueh Bulu are little sponge cakes made primarily of eggs, sugar and flour, made into various shapes. These small cookie size cake are popular and availabel at market stalls and bazaars, esp. during the Chinese New Year and Hari Raya Festivals.
Kuih Bahulu
Ingredients
- 5 eggs
- 130g castor sugar
- 200g plain flour
- 1 tbsp baking powder
- 1 tablespoon cooking oil
- 1/2 tsp vanilla essence
Method
Preheat Oven to 200 degC. (if traditional mould is use, preheat them)
Sift the flour and baking powder.
Beat eggs with an electric mixer until just frothy then add sugar and essence. Continue beating until mixture turns pale and consistency becomes thick.
Fold in flour the flour but do not over mix. Add in the oil.
Grease the bahulu moulds and spoon the batter up to the top.
Bake in for 12–15 minutes or until golden brown. Remove from the moulds and cool before storing.
