Sambal is a chilli paste mixture or condiment served as a side dish that is taken with rice or fresh vegetables. The basic ingredients are grounded chillies, belacan, lime juice and sometimes onions or other ingredients. Sambal can be cooked with prawns, aubergine, ladies fingers or anchovies. Locals usually serve freshly prepared sambal (as a condiment or dip) with fresh raw vegetables – local equivalent of a salad.

Sambal Belacan

Ingredients 

6 red chilies

5mm slice of square shrimp cake/paste or belachan

1-2 small lime

sugar, salt to taste

Method

Remove seeds from chilies. Chop shrimp cake into small pieces and fry (no oil) till dry or toast.
Pound or grind chilies with toasted shrimp paste. Add juice of the lime and sugar and salt to taste. Serve with rice and other dishes.
