Shark Fin Soup

Shark's fin is a favourite dish at Chinese dinner celebrations and a popular dish for the Chinese New Year

Shark Fin Soup with Crab Meat

Ingredients

  • 100g shark fin
  • 1 (3cm) piece ginger (flattened)
  • 1 stalk spring onion
  • 1200ml chicken stock or a small pot of stock (Recipe for Chicken stock)
  • 150g crab meat
  • 1 tbsp corn flour (mixed with some water)
  • 1 egg white
  • Some black vinegar for serving (optional)

Seasoning:
  1-2 teaspoon salt
  2 teaspoon sugar
  1 teaspoon pepper
  1 tablespoon oyster sauce
  1 teaspoon Chinese wine (optional)

Method
Boil ginger, spring onion and some water. Add shark fin and leave to boil for about 5 minutes. Remove from heat, rinse and drain the shark fin.

Boil crab meat in stock and add in all the seasoning. Stir in the shark fin and boil. Then add the corn starch solution to thicken while boiling. Remove pot from flame. Stirring evenly while adding in the egg white.
Serve while warm with black vinegar or as desired
